matcha
precious dew
Matcha can be prepared in two ways. Koicha (or "thick" tea) has a higher ratio of matcha
powder to water. Usucha (or "thin" tea) is made with less matcha. Pre-heat a tea bowl with
hot water. In a separate bowl, mix 2 tsp. matcha and 1/2 cup hot water for Koicha. Or mix
1/2 tsp. and 1/4 cup hot water for Usucha. Whip tea to a froth with a whisk, pour it into the
warm tea bowl, and drink immediately.
matcha latté: whisk 1 tsp. matcha into 1/4 cup of steaming water until dissolved. Use water
under the boiling point. Combine with 3/4 cup steamed milk. Serve in latté bowl, matcha
bowl or deep mug. Sweeten with honey or sugar if desired. Makes 1 cup.

spicy mandarin infused rum: Add 6 tbsp. of dry tea leaves to 2 cups of rum. Wait 20 min and then strain tea leaves out. Add a generous splash of Spicy Mandarin rum to steamed milk, egg nog, apple cider, hot chocolate, or ginger-ale.
spicy mandarin apple: mix hot tea with equal parts hot apple cider. Garnish with a cinnamon stick, or a dusting of cinnamon and icing sugar.
